Ingredients:
110 g of dark chocolate
110 g of butter
60 g of flour
150 g of sugar
4 organic eggs
Butter and flour for individual molds
For the hazelnut praline
450 g of crushed nuts
280 grams of sugar
100 g of water
1 pinch of fleur de sel
Steps of the recipe
For the hazelnut praline, preheat the oven to 200°C. Roast the nuts for 10 minutes. Mix water with sugar in a pot and cook until you get a blond caramel. Add the hot nuts, mix immediately and transfer to a silicone sheet or flat baking paper. Allow to cool slightly and add fleur de sel. Pour into the bowl of a blender and blend until the praline is very smooth. Throw it in a jar or container of your choice.
To prepare the chocolate biscuit, preheat the oven to 190°C. Put butter and flour in small molds. Place a bowl of hot water in a saucepan and melt the chocolate in a bain-marie. Spread the butter. Remove the salad bowl from the pot. Then add flour and sugar. Mix it up.
Whisk the eggs into the omelette in a bowl. While whisking, slowly pour into the previous mixture. Pour 120 grams of dough into each mold and bake for 7 minutes. Spread upside down on a wide spatula and place right side up on plates, spoon a teaspoon of praline in the center.
