Kirill Linyak shares a delicious recipe for fried fish and fresh vegetables

For a change from your usual recipes for fish, Cyril Lignac offers you a delicious fried fish with vegetable sauce of Our Lady.

4 per person


4 pieces of white fish, 130 g each
25 g semi-salted butter
½ liter of chicken broth
4 slices of lemon
Olive oil
fine salt

The Virgin of Vegetables
125 g cherry tomatoes, washed and quartered
1 piece of broccoli
1 shallot, peeled and chopped
1 lemon juice
10 tsp olive oil
Fleur de sel and Espelette pepper

Steps of the recipe

Blanch the broccoli heads in lightly salted boiling water, when the tip of a knife can be easily inserted, drain and place in cold water with a few ice cubes. Drain and cut into small pieces so that they are not too big. Mix with quartered tomatoes, chopped shallots, pour olive oil, lemon juice, mix gently and season with fleur de sel and espelette pepper.

Preheat the oven to 150°C. Pour a little olive oil in a hot pan, add the butter and let it foam to get a light color. Season the fish fillet with salt, place it in a pan and sear it from all sides. Remove from the dish and place in a pot.

Pour in the chicken stock and put in the oven for 10 minutes. At the end of cooking, remove the fish and place it on the plates, sprinkle the virgin and a slice of lemon on top.
