A new recipe for salmon, honey and vegetable curry


Serves: 4 – Prep: 10 minutes – Prep: 15 minutes

ingredients

  • 454 g (1 lb) salmon fillets, diced
  • 45 ml (3 tbsp) cooking oil
  • 15 ml (1 tbsp) mustard powder
  • 30 ml (2 tbsp) honey
  • Salt and pepper to taste

sauce

  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 500 ml (2 cups) broccoli, top
  • 250 ml (1 cup) chickpeas
  • 8 to 12 mini bell peppers
  • 60 ml (4 tbsp) yellow curry powder
  • 250 ml (1 cup) coconut milk
  • 250 ml (1 cup) tomatoes, chopped
  • 250 ml (1 cup) vegetable broth
  • 15 ml (1 tbsp) sugar
  • 1 lemon, juice
  • Salt and pepper to taste

accompaniment

  • white rice
  • Couscous semolina

Preparation

Step 1

Fry the salmon cubes in a little oil in a hot pan for 2 minutes on each side.

Step 2

Add mustard powder, honey and mix. Remove from heat and keep aside.

Step 3

In the same hot pan, add onion, garlic, broccoli, pepper, curry powder, coconut milk, crushed tomatoes, stock and cook for 10 minutes. Add sugar, lemon juice and mix. Check the seasoning.

Step 4

Place the salmon cubes in the prepared sauce.

Step 5

Serve with rice or semolina.
